My Christmas rocky road squares are a no bake marshmallow, peanut butter and chocolate treat with the addition of Christmas spice. They are based off the delicious traditional Newfoundland treat and are gluten free!
In a large bowl, add the butter, peanut butter and chocolate chips. Heat in 30 second increments, stirring each time, until everything is melted and fully combined.
Add the cinnamon, allspice, nutmeg and ginger and stir to combine. Then add the marshmallows and m&m's and stir so everything is combined and coated in chocolate mixture.
Pour it all into the lined pan and gently push it down so it's spread evenly. Sprinkle the coconut on top if using and sprinkles and then put in the fridge for at least 2 hours to set up. Once it's ready, slice into squares and enjoy!
