Easy Peppermint Fudge

Perfectly sweet, super easy chocolate peppermint fudge that's great for cookie tins and can be made in the microwave. No baking skills or stove required!

Ingredients
  

  • 1 300mL/10oz can sweetened condensed milk
  • 400g/14oz semi sweet or dark chocolate (I like to use half and half)
  • 2 tbsp (28g) unsalted butter
  • 3/4 tsp peppermint extract
  • 2 candy canes, crushed

Instructions
 

  • Line an 8x8 pan. Set aside.
  • Add chocolate, milk and butter to large microwave safe bowl. Heat in 30 second increments, stirring in between, until fully combined. You can also heat the mixture up over a double boiler if you prefer.
  • Stir in the peppermint extract and pour the mixture into the lined pan. Gently even it out with a spatula. Sprinkle the crushed candy cane (*see notes) on top. Push down a little on the candy cane so it sticks into the top of the fudge.
  • Place in the fridge for at least 2 hours or until firm. Store in an airtight container at room temperature or in the fridge for up to 2 weeks and enjoy!

Notes

*To crush the candy canes, place them in a reusable or disposable bag and seal it. Hit the candy canes with something heavy like a rolling pin until all the large pieces are crushed.
