Pumpkin Biscoff Energy Bites

Ingredients
  

  • 3/4 cup (150g) pumpkin puree
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 3/4 cup (195g) Biscoff
  • 1/4 cup (80g) maple syrup
  • 1 tsp vanilla extract
  • 1 1/2 cups (180g) rolled oats
  • 2 tbsp (10g) ground flaxseed
  • 2 cup (200g) almond flour

Instructions
 

  • Line a tray with parchment paper and set aside. This will be to lay your balls on.
  • In a large bowl, add the pumpkin, cinnamon and cloves. Stir until fully combined. Then add in the Biscoff and stir until fully combined. Use the back of your spoon to kind of push it all together. This helps break down lumps.
  • Stir in the maple syrup and vanilla extract. Then add the oats, flaxseed and almond flour. Don't overmix or the oils will start to separate.
  • Scoop 1.5 tbsp and lay them on the parchment paper lined tray. Roll each into a ball with your hand. Store in an airtight container for up to 3 days and enjoy!
