Pumpkin Pie Overnight Oats

Pumpkin pie overnight oats are the ultimate Fall breakfast, sure to satisfy any dessert cravings while still being nutritious and filling. A simple little pumpkin pie on the go.

Ingredients
  

  • 1/3 cup (75g) unsweetened oat milk (or milk of choice)
  • 1/4 tsp ground cinnamon
  • 1/8 tsp ground allspice
  • 1/8 tsp ground ginger
  • 3 tbsp (42g) plain nonfat Greek yogurt
  • 1/4 cup (50g) pumpkin puree
  • 1 tbsp (20g) maple syrup
  • 1/4 tsp vanilla extract
  • 1/2 cup (60g) rolled oats

Optional Toppings

  • 1 tbsp (7g) graham cracker crumbs (or 1 graham cracker crushed)
  • A couple of chopped pecans
  • 2 tbsp (28g) vanilla or plain Greek yogurt

Instructions
 

  • In a small jar or container, that's at least 250mL, add all of the ingredients except the oats. Stir until combined. Add in the oats and stir until combined.
  • Seal the container or jar and store in the fridge for at least 6 hours. Before eating, top with graham cracker crumbs or any other desired additional toppings and enjoy!
