Today, I’ve got a list of various desserts to use up leftover heavy cream or whipping cream that you’ve got sitting in the fridge. In this economy, who can afford to throw stuff out?! From luxurious desserts to simple frostings, everything is below.
Even if you aren’t concerned about throwing out leftover food due to cost, we should all care about food waste. So much food is already wasted, so I like to try and use as much of everything as I can. Sometimes, I can’t think of what to do with leftover cream either so I wanted to create this list.
If nothing on here interests you, a simple whipped cream to top your pancakes or other desserts is also a perfect, easy way to use it up. Otherwise, throw a little in sauces, soups or casseroles when you’re cooking.
FAQ: All Your Cream Questions
Can I Freeze Heavy Cream?
Yes, pour it into ice cube trays and freeze for easy storage. Allow it to thaw in the fridge. However, it likely won’t whip well once frozen but it can still be added to sauces or baked desserts.
Why Do So Many Desserts Require Heavy Cream?
Cream adds moisture, richness and a smoother texture. If adding it already whipped, it helps stabilize desserts like no bake cheesecake and mousse.
Can I Substitute Half and Half or Milk For Heavy Cream?
Depending on the recipe, yes. Many baked desserts you could substitute but for anything that’s whipped or needs something to help stabilize it or requires thickening, you’ll need the high fat content of heavy cream.
How Long Does Whipping Cream Last In The Fridge?
It should generally last until it’s best before date but it will often last 1-2 weeks past the best before date, especially if unopened. Just make sure you smell it before using to ensure it isn’t sour. Sometimes, the edges of where you pour can smell sour although the cream itself is fine. I pour a little into a cup and then smell it if this happens.
Difference in Whipping Cream vs. Heavy Cream
Whipping cream is what it’s called in Canada and typically has 33% milk fat.
In the United States, it’s generally called heavy whipping cream or I’ve seen many people say heavy cream. They can have from 30-36+% from my research. Please correct me if this is wrong though.
In the UK, it’s often referred to as double cream which actually has 48% milk fat. Whipping cream will contain 35-38% milk fat and be more similar to the Canadian and US versions.
Savoury Ideas
Heavy cream can be used in so many ways when cooking but the easiest would be to add some to creamy sauces or soups.
Another really simple way to use up lots of cream is to turn it into butter. All you need to do is add it to a bowl and whisk it until it turns to butter. The extra liquid at the bottom of the bowl is buttermilk and can also be reserved for sauces or baking.

1 pint = 2 cups
1 US cup = 236mL
1 metric cup (Canada/Australia) = 250mL
1 cup = 220g/7.7oz (with 33% milkfat, will change with different percentage)
1/4 cup = 55g/1.9oz (with 33% milkfat, will change with different percentage)
1 tbsp = 14g/0.5oz (with 33% milkfat, will change with different percentage)

Add it to your coffee
Add to French toast batter (the extra fat helps give it that golden crispiness)
Add it to scrambled eggs

Whip it with a pinch of sugar to top some berries or fruit

How to Make Whipped Cream
No matter how much cream you’ve got left, you can use it to make whipped cream. Just add what you have to your mixer, or a bowl for a hand mixer, which would be easier if you only have 1-2 tbsp. Then add a pinch of sugar and vanilla if you want to and whisk at medium high speed until medium or stiff peaks form, depending on what you’re going for. Use it to top pancakes or waffles, crisps, brownies, pie, or if you have a tiny bit, a a mug cake, like my funfetti mug cake or my chocolate chip mug cake.
