Today, I’ve got the most simple funfetti mug cake that’s packed with flavour and colour! This cake just uses basic pantry staples and requires no eggs or butter. Plus between prep and cooking time, this cake is ready in under 5 minutes!
Mug cakes are one of my favourite treats in the world as I find a lot of weeknights, after a long day, I crave a slice of cake. Obviously, most nights after the kids go to bed, I’m not whipping up an entire cake. Plus, I don’t want to eat an entire cake, just a slice. This is where mug cakes are a beautiful thing. They generally require very simple ingredients and are cooked in the microwave.
My funfetti mug cake is similar to my chocolate chip mug cake but it has the traditional birthday cake flavour thanks to a hint of almond extract. You can skip this but I highly recommend adding it in. It’s crazy how much it will enhance the flavour and really give it that birthday cake flavour! This sprinkle cake essentially is perfect on it’s own but you can top it with ice cream or frosting as well.

What Should I Top it With?
My favourite thing to put on this funfetti mug cake is just straight Nutella. If using Nutella, let the cake cool for a minute and then spread it on top of the cake. As it warms, it will be super easy to spread.
Otherwise, my stabilized whipped cream would be amazing or my strawberry buttercream. Any leftover frosting will pretty much work though. If using a frosting or cream, let the cake cool before putting it on.
Typically if I don’t use Nutella though, I just use whatever I have leftover as I’m not typically making a full batch of frosting for a mug cake.
Can I Make This Cake Vegan?
Yes, just use a non dairy milk like oat or almond milk and the cake will be vegan!
What if I Don’t Have Almond Extract?
I find the almond extract adds a lot of flavour plus I absolutely love almond flavouring. It also adds to that traditional birthday cake taste.
However, if you don’t have any, you can skip it. The cake will still have lots of flavour from the vanilla, sugar and sprinkles.

How to Properly Measure Flour
When it comes to measuring flour, the most accurate and easiest way is to use a kitchen scale. I always use a scale and could never go back to measuring in cups. It’s such a hassle and way more dishes!
If you don’t own a scale, there are a couple steps to properly measure flour as it becomes compacted just sitting in the bag or container. I highly recommend you follow these as just scooping flour out of the bag can potentially lead to at least an additional 1/4 cup of flour. This equals dry and dense baked goods which is not what anybody is going for.
1. Fluff the flour by giving it a mix with a whisk or fork.
2. Spoon the flour into your measuring cup.
3. Level the excess flour off using a butter knife. (With the back of the knife level to the top of the measuring cup, run it over top, pushing the excess flour back into it’s container.)
4. Repeat until you’ve measured the amount the recipe calls for.
Baking Tips
- Don’t overmix your batter! Overmixing leads to a denser cake as you’ll start developing the gluten.
- As this is very small measurements, to ensure the cake turns out properly, make sure you are measuring the ingredients correctly.
- I create my recipes based off weights so I recommend measuring by weights if you own a scale. It’s actually so much easier and makes for much less cleanup. I wish I had baked by weight from the beginning, I could never go back now.

Funfetti Mug Cake
Ingredients
- 1/4 cup (30g) all purpose flour
- 2 tbsp (25g) granulated sugar
- 1/4 tsp baking powder
- pinch of salt
- 3 tbsp (42g) unsweetened oat milk (or any milk)
- 2 tbsp (22g) canola oil (or any neutral oil, like avocado oil)
- 1/4 tsp vanilla extract
- 3-4 drops almond extract (*see notes)
- 1 tbsp (10g) sprinkles
Instructions
- In a microwave safe mug or dish, add the flour, sugar, baking powder and salt. Whisk until combined.
- Add in the milk, oil, vanilla extract and almond extract. Whisk until fully combined and then stir in the sprinkles.
- Microwave for about 90 seconds. You may need a little longer depending on the wattage of your microwave. If it still looks a little wet on the edges, pop it in for another 15-30 seconds.
- Allow to cool, add any toppings you like and enjoy!
This mug cake is one of my go to weeknight treats when I’m craving cake. I usually just add a dollop of Nutella on top and it’s amazing!
