Pumpkin Biscoff Energy Bites

Today, I have the most amazing little pumpkin biscoff energy bites. These little energy balls are the perfect snack on the go or addition to your kids lunch box. An easy, and healthier way to snack and satisfy your sweet tooth.

Biscoff is one of my favourite flavours and after combining it with pumpkin to create my pumpkin biscoff truffles, which are shockingly one of my daughter’s favourites out of everything I make, I knew I knew I needed to turn them into a healthy little snack. I absolutely love to snack, especially around 3-4pm when the energy starts waning. I typically crave something sweet so these bites are a great little afternoon pick-me-up that are full of Fall spices and flavours.

If you’re a fan of pumpkin, biscoff or just truffles in general, then you definitely need to try these. While these will be chewier than a traditional truffle, due to the oats, these still have a similar consistency and are packed full of flavour and goodness.

Are These Energy Bites Healthy?

They are a healthier option containing pumpkin, almond flour, flaxseed and oats. All of these are high fibre ingredients which will help keep you full longer.

Are These Energy Bites Gluten Free?

Not as written but you can make your own gluten free cookie butter and make them gluten free. If it’s a bit runnier then Biscoff, you may need to add more almond flour or oats to stiffen the mixture. Also ensure your oats are gluten free.

Do I Need To Cook or Bake Anything?

Nope, they just need to chill in the fridge for at least an hour to firm up.

How Long Will These Bites Last?

Store them in an airtight container in the fridge for 1 week or the freezer for up to 3 months.

How Do I Freeze These?

Let them firm up in the fridge or freezer first so that they don’t stick together. Then put them in an airtight container in the freezer.

Can I Use Homemade Pumpkin Puree?

Yes, but this will be typically runnier than canned so add more almond flour or oats as needed to get the correct texture.

How Do I Fix My Dough Being Too Sticky To Roll?

If you find they’re sticking to your hand too much, stir in a little more oats or almond flour. Put a little water on your hands when rolling to prevent them sticking as much.

Scoop about 1.5 tbsp size balls and lay them on a baking sheet lined with parchment paper. Once you’ve scooped all the balls, then wet your hands with a little water. This helps prevent them from sticking to your hands.

Roll each scoop with the palms of your hands into a ball and lay back on the baking sheet. Repeat until you’re done.

Follow the order of steps of mixing in the recipe. Overmixing the almond flour can cause the oils to separate, ruining the consistency of your mixture.

  • If using fresh pumpkin puree, you will likely need more almond flour or oats to offset the extra moisture.
  • Don’t overmix or the oils may separate from the almond flour
  • I create my recipes based off weights so I recommend measuring by weights if you own a scale. It’s actually so much easier and makes for much less cleanup. I wish I had baked by weight from the beginning, I could never go back now.

Pumpkin Biscoff Energy Bites

Ingredients
  

  • 3/4 cup (150g) pumpkin puree
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 3/4 cup (195g) Biscoff
  • 1/4 cup (80g) maple syrup
  • 1 tsp vanilla extract
  • 1 1/2 cups (180g) rolled oats
  • 2 tbsp (10g) ground flaxseed
  • 2 cup (200g) almond flour

Instructions
 

  • Line a tray with parchment paper and set aside. This will be to lay your balls on.
  • In a large bowl, add the pumpkin, cinnamon and cloves. Stir until fully combined. Then add in the Biscoff and stir until fully combined. Use the back of your spoon to kind of push it all together. This helps break down lumps.
  • Stir in the maple syrup and vanilla extract. Then add the oats, flaxseed and almond flour. Don't overmix or the oils will start to separate.
  • Scoop 1.5 tbsp and lay them on the parchment paper lined tray. Roll each into a ball with your hand. Store in an airtight container for up to 3 days and enjoy!
