Today, I’ve got a delicious seasonal variation on my Newfoundland rocky road squares. My Christmas rocky road squares are still full of peanut butter, marshmallows and chocolate but with a little bit of Christmas spice and colour added in. These are the perfect no bake addition to any cookie tin or tray!
These are one of my favourite treats year round so I knew I needed a Christmas version. I absolutely love peanut butter with spices and chocolate with spices so these are perfect! Add whatever sprinkles you like to make them even more festive. I decided on little trees with the coconut so it looks like a wintery Christmas scene.
Bring these simple little treats to any get togethers and I guarantee they’ll be a hit! Easy to make, they require no oven and they’re so cute and festive. Plus, these will please the kids and the adults which is always an easy win!
For some more quick no bake treats to make around the holidays, try my no bake peanut butter oat bars which can be made festive easily with sprinkles or my Christmas scotcheroos. Both super festive but also really quick and easy.

How to Decorate
Honestly, however you want. I loved the look of the coconut with the little tree sprinkles but you can just do coconut or just do sprinkles as well.
Can I Skip the Spices?
Absolutely, I love spices with chocolate but they aren’t needed in this recipe. So only include them if you want.
Are these Christmas Rocky Road Squares Gluten Free?
Yes! Just ensure your marshmallows, m&m’s and decorations are gluten free as some brands may contain gluten.
As a side note, if making anything gluten free for someone with an allergy, ensure you thoroughly wash any equipment, jars or utensils. Any contact with flour may trigger an allergy. I like to say any baking I do in my own home is gluten friendly as I am using flour often and cannot guarantee there’s been no cross contamination.
Another delicious gluten free Christmas treat is my quick peppermint fudge, which can be made in the microwave!

Chill Time & Storage
Getting the chocolate to fully set can take a couple of hours so I usually pop these in the fridge to speed up the process. Once you’ve cut them, store them in an airtight container at room temperature or in the fridge. I prefer to keep them at room temperature as the m&m’s get pretty hard in the fridge.
Baking Tips
- You can use whatever type of chocolate you like but I prefer semi sweet to balance the sweetness of the marshmallows.
- I don’t recommend using a natural peanut butter for this recipe.
- I create my recipes based off weights so I recommend measuring by weights if you own a scale. It’s actually so much easier and makes for much less cleanup. I wish I had baked by weight from the beginning, I could never go back now.

More Quick Christmas Treats
Today’s song is a song I grew up listening to at Christmas in Newfoundland and one of my favourites. It always reminds me of home. Here’s I Saw Three Ships by The Irish Rovers. Happy baking!! **Disclaimer: Liv’s Little Muffins owns no rights to this song.
